I've made this recipe which I've slightly adapted from a toddler cookbook twice in the past two weeks for Jessica and she seriously LOVED it. I was quite surprised at the way she devoured it but it wasn't at all bad even if I say so myself. So I thought I would share it because it's easy, nutritious and child friendly. I would also say it's pretty idiot proof because you'd have to try pretty hard to make it turn out bad. You can't ask for more than that.
1 cod fillet
1 salmon fillet
100g Peas
100g Sweetcorn
1/2 - 1 tsp Mustard Powder
Butter
1 tbsp snipped Chives
2 tbsp Flour
400ml Milk
1 Bayleaf &1 parsley stalk
50g Grated Cheddar
Salt & Pepper
1 or 2 boiled hard boiled eggs (optional).
For The Topping:
400 - 500g Boiled Potatoes
3 tbsp Milk
1 Knob Butter
Salt & Pepper to taste
Method
Put the fish into a shallow pan with the milk & parsley & bayleaf. Bring to the boil & cook for five mins.
Remove the fish, flake & set aside. Strain the milk and reserve.
Melt the butter in a small pan add the onion and saute for 5 mins. Stir in the flour to make a paste and then gradually add the milk stirring until the sauce thickens. Add the mustard, peas, sweetcorn, chives, cheddar and flaked fish. Season.
Put the mixture in an oven proof dish, or several if making individual pies.
Mash the potatoes with the butter & milk. Season. Spread the mashed potato topping over the top. Make peaks using a fork.
Cook in a pre-heated oven for 25 mins.
